chickensAs we breed hens in spring and summer for our laying flocks, we do of course end up with almost the same number of roosters. They spend their days roaming with the layer flocks eating a delightful diet of grains, plants and insects, building up big, strong legs that will ultimately find culinary perfection in a rich and flavourful, slow-cooked dish on a frosty winter night.

These are very special, as the heritage breeds grow much more slowly than the Cornish cross meat birds, reaching their full size at 6-9 months instead of 6-10 weeks.

While they are a little more complicated to prepare, we believe the flavour is worth the extra effort.
